As I was noting, this poke cake is super simple and the ingredients are so too. Here’s how it goes –
Raspberry Jell-O – or any red or pink gelatin powder. For this raspberry cake, I would suggest not substitute it.
White Cake Mix – go for a white cake mix, since it will look prettier with the raspberry color.
Cool Whip – for the whipped topping. You can also use heavy whipping cream, but it has to be super thick.
Fresh Raspberries – for the topping.
Eggs, Water, Oil & Milk – for the white cake mix. The packaging will note what you need to add to make this recipe.
HOW TO MAKE RASPBERRY POKE CAKE
- Following the directions on the box, bake the white cake.
- When the cake is done baking, poke holes in it with a the handle end of a wooden spoon, place in the fridge to chill.
- Prepare Raspberry Jell-O with 1 cup boiling water and 1/2 cup cold water. Mix until gelatin mix is dissolved. Pour over the cake and refrigerate. This will seem like a lot of liquid but the cake will absorb it and it won’t become mush.
- Top with the cool whip and handful of fresh raspberries and serve.
