If you love strawberry flavored desserts, this poke cake is going to become your new favorite dessert. Sweet, moist, and fluffy strawberry poke cake with a delicious, crunchy cookie topping. Insanely delicious! This cake is made with white cake mix and strawberry jello, which makes it a very easy cake to make at home. I believe anyone can make it, since it takes only a few simple ingredients for the cake and the topping. The crunchy topping is made with golden Oreos, unsalted butter and more of strawberry gelatin mix. Strawberry crunch cake infused with strawberry flavor, chilled and then topped with whipped cream and strawberry cookie crunch topping.

STRAWBERRY CRUNCH DESSERT
This dessert is crazy simple to make and makes a great weekday dessert recipe. It is also one of my favorite summertime cookout desserts that is eaten in no time. This cake is inspired by the childhood favorite – classic strawberry crunch ice cream bars everyone was obsessed over. Of course, you can twist anything and make the flavor into a moist strawberry poke cake. Baking is so insanely good and fun! It’s the perfect dessert for those warmer summertime evenings, weekdays, baby showers and special occasions. Strawberry jello crunch cake that is a must-make!
INGREDIENTS NOTES
The only thing that I had to look for was Golden Oreos, how crazy is that in Germany?! Here’s how the recipe goes :
Golden Oreos – for the crunchy cookie topping. You are going to infuse these with jello mix. Don’t forget to finely crush your cookies.
Strawberry Jello Mix – 2 boxes in total, for the topping and the cake. You can also choose cherry flavor, or raspberry flavor if you want to make a twist or can’t find the strawberry jello.
Unsalted Butter – you can also use salted butter, but don’t use margarine for this recipe.
White Cake Mix – I suggest using white cake mix and ditch yellow one for this recipe, so that the jello mix beautifully stands out with the pink color.
Cool Whip or Whipped Cream – we used cool whip to make the recipe easier than ever, but you can also make your own homemade whipped cream.
Fresh Strawberries – for decorating the cake.
Boiling Water & Cold Water – for making the jello mix.
HOW TO MAKE STRAWBERRY CRUNCH POKE CAKE
- Preheat the oven to 350° degrees F and prepare the 9×13 baking pan with a parchment paper.
- Prepare your cake mix according to package directions for a white cake.
- Add the cake batter to the prepared pan and bake according to package instructions (around 22-25 minutes or a toothpick inserted near the center comes out clean).
- Cool completely, then poke holes all over the cake using the tines of a fork.
- Combine the first box of a strawberry gelatin and the boiling water and whisk until powder is dissolved. Add in the cold water and whisk in until incorporated. Pour the liquid gelatin mixture evenly over the holes on the cake.
- Pour the gelatin over the cake, cover and refrigerate for 3-4 hours or until chilled.
- Then cover the whole cake in the whipped cream. Just spread an even layer all over the cake.
For The Crunch Topping :
- Add your Oreos to a bag or food processor. Then use rolling pin to crush the Oreos to make a crumble.
- Add Oreos to a bowl, then add in the strawberry Jello packet and melted butter. Mix well.
- Sprinkle it over the cool whip.
- Top the cake off with chopped strawberries. Make sure each piece has a strawberry on it.
- Serve it or refrigerate it until ready to serve.

- 8 oz Cool Whip
- 20 golden oreos
- 1/4 cup unsalted butter
- fresh strawberries
- 1 cup boiling water
- 1 cup cold water
