These are the perfect cupcakes kids can make for their moms on Mother’s Day breakfast, they are absolutely delicious, light and with an amazing flavor combination. If I think of the perfect cupcake recipe, it has texture, moisture, and creaminess. These banana pudding cupcakes combine all of these aspects. RECIPE INGREDIENTS LIST
Although these cupcakes look very gorgeous, they are actually so easy to make. Ingredients are super simple too. Here’s how it goes –
For The Cupcakes
Yellow Cake Mix + Eggs, Vegetable Oil, Milk – You’re going to bake the cupcake base based on instructions on the package. You’ll need to add eggs, vegetable oil and milk.
For The Filling
Vanilla Pudding Mix – any vanilla pudding mix will do the job. We used the original Jell-O vanilla pudding mix.
Banana Chunks – a little surprise to add extra layer of texture.
Milk – to make the pudding mix.
For The Topping
Heavy Whipping Cream – you can also use Cool Whip if you don’t want to make your own whipped cream.
Powdered Sugar – to beat the whipping cream together.
Banana Pieces – for decorating.
Vanilla Wafer Crumbs – for decorating.
I am an advocate for easy recipes, so cake mix is one of the ingredients that help this recipe to be easier than ever. If you’re brave enough, you can also make them from scratch with a classic cupcake ingredients list.
HOW TO MAKE BANANA PUDDING CUPCAKES RECIPE
The Cupcakes
- Preheat the oven to 350°F. Mix the yellow cake mix batter as per the instructions. (You’ll need to add eggs, milk and vegetable oil)
- Line a cupcake pan with cupcake liners.
- Divide batter by filling each one about ¾ full. Bake for 15 minutes.
- Remove from the oven and allow to cool completely on wire racks.
The Filling
- Chop bananas into small pieces and add the pudding mix to the whole milk. Add the chopped bananas to the bowl with the pudding mix and the milk, stir to combine. Then place the mixture into the fridge for at least 15 minutes.
- Once the cupcakes are cooled, hollow out the center of each cupcake. Once the vanilla pudding filling has set, spoon into a piping bag with a Wilton 4B tip. Pipe into each cupcake, filling them with the vanilla pudding.
The Whipped Cream
- Add the cream, vanilla extract and powdered sugar to a large mixing bowl and beat until stiff peaks form.
- Pipe the whipped cream onto the top of the cupcakes.
- Decorate each cupcake with a banana circle and then sprinkle with crushed vanilla wafers.
SUBSTIUTIONS AND ADDITIONS
Banana Pudding – Instead of vanilla pudding, you can add pre-made banana pudding into the center of each cupcake. Maybe it’s too much for some, but maybe it’s perfect for real banana flavor advocates.
White Cake Mix – Use white cake mix instead of yellow one.
Banana Buttercream Frosting – Again, it may suit those who can’t get enough of the banana flavor, but may be too much for some.

- 3 eggs
- 1 cup milk
- 1/2 cup melted butter

- 1/4 cup powdered sugar
