This lemon loaf combines a perfect combination of sweet, tart, and fruity. There is something about the lemon-strawberry combination that makes a dessert even better. The best part? Quick breads get their name for a reason – they’re easy to make! If you are a lemon dessert lover like me, you can also enjoy these luscious lemon brownies with lemon glaze, but I must say that you need to try out this lemon bread this spring and summertime.

Bread with Fresh Strawberries
If you have fresh garden strawberries and don’t know what to do with a bunch of lemons you bought last week, try this fresh lemon and strawberry bread with melt-in-your-mouth strawberry glaze. If you love strawberries and lemons this is the recipe for you. It’s delicious with just a pat of glaze on top – I know you’re going to love it. I must say that fresh fruit and berries can be tricky to work with because it adds a lot of moisture to the bread. Finely diced strawberries worked beautifully in this recipe.
When it comes to a glaze, it’s just way too good to be true. The secret ingredient is heavy cream. This is the first time I am using one, and I must say that it’s the best decision ever. This strawberry glazes comes out thick, pink and perfect for this bread. It is such a melt-in-your-mouth strawberry glaze recipe that will be sure to give you success every time.

HOW TO MAKE LEMON BREAD WITH FRESH STRAWBERRIES
This bread is super simple to make, and only requires two mixing bowls and a loaf pan. Here is how it’s done:
- Preheat oven to 350°F. Grease a 9×5″ loaf pan with cooking spray. Set aside.
- For The Batter : In a medium bowl, stir together the sugar, milk, oil, egg and vanilla extract. In a separate bowl, combine the flour, baking powder., baking soda and salt. Add the dry ingredients to the wet ingredients and stir until just combined. In a small bowl, toss together the chopped strawberries and the 1 tablespoon of flour to coat the strawberries. Fold strawberries into the batter.
- Pour the bread batter into a greased 9″x5″ bread pan. Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 30 minutes, then remove the bread to a wire rack to cool completely.
- For The Glaze : Mix together powdered sugar, fresh, chopped strawberries, and vanilla extract in a bowl. Mix until smooth. Use heavy cream or milk to make the glaze more spreadable. Although it’s optional, it makes a great consistency of the glaze.
- Once the bread is cool, spread the glaze on top of the bread. Slice and serve.
PRO TIPS FOR THE BEST RESULTS
The first pro tip is when you add the flour, don’t overmix! Mix just until the flour is absorbed. This will ensure you get a soft and tender crumb once the bread is baked. The second thing is to make the bread at least one day in advance. Although it’s optional, it allows the lemon-strawberry flavor develop to taste even more amazing. Once it’s cool, wrap it and leave it at room temperature. Pour the glaze over just right before serving.

Would you store this in the fridge after serving? I’m just thinking about the heavy cream being left at room temperature, and if that would be safe? I typically will only do butter or cream cheese room temperature at 24 hours max, but didn’t know if the heavy cream would alter those times?
