Watermelon Jalapeno Margarita

This easy spicy watermelon margarita is super easy to make and is perfect for a hot summer day! Made with watermelon, homemade jalapeno simple syrup, tequila and zesty lime juice, it makes the perfect Mexican night cocktail!

Ingredients
  

  • 1 cup water
  • 1 cup granulated sugar
  • 2 jalapeno peppers, sliced
  • 2 cups watermelon, diced
  • 1/4 cup salt and lime zest mixture (zest from 1 lime)
  • 2 oz tequila
  • 1 oz lime juice

Instructions
 

  • Start by making the jalapeno simple syrup. In a saucepan, combine the water, sugar, and sliced jalapeno pepper. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves completely. Reduce the heat to low and let it simmer for about 5 minutes. Remove from heat and let it cool. Once cooled, strain the syrup to remove the jalapeno slices and set it aside.
  • To make the watermelon juice, place the diced watermelon in a blender or food processor. Blend until smooth. If desired, strain the juice through a fine mesh strainer to remove any pulp. Set the juice aside.
  • In a cocktail shaker, combine the tequila, lime juice, jalapeno simple syrup, and watermelon juice. Add a handful of ice cubes and shake vigorously for about 20-30 seconds to chill the mixture.
  • Take a margarita glass and rim it with the salt and lime zest mix, if desired. Fill the glass with ice cubes.
  • Strain the margarita mixture into the prepared glass, pouring it over the ice cubes.
  • Garnish with a slice of watermelon and slices of jalapeno on the rim of the glass.
  • Serve and enjoy!
