Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking pan.
In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the molasses, egg, and vanilla extract, and mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
Spread the gingerbread batter evenly into the prepared baking pan. Use a spatula to smooth the top.
Bake for 20 minutes or until the edges are set and the center is slightly soft. Be careful not to over bake if you want the bars to be chewy and thick.
While the bars are cooling, prepare the cream cheese icing. In a mixing bowl, beat the butter and powdered sugar until creamy and well blended.
Add the cream cheese and mix until smooth and fluffy.. If you prefer a sweeter flavor you can add one teaspoon of vanilla extract with the cream cheese
Once the gingerbread bars have cooled completely, spread the cream cheese icing evenly over the top.
Optionally, you can sprinkle some sprinkles, ground cinnamon or ginger on top of the icing for added flavor and decoration.
