- 2 cups old fashioned oats
- 1 tsp baking powder
- 2 eggs
- 1 tsp cinnamon
- 1 tbsp chia seeds
- 1 cup fresh blueberries
- 2/3 cups milk
- 1/2 cup applesauce
- 2 tbsp maple syrup
In a mixing bowl combine the oats, baking powder, cinnamon, and chia seeds. Whisk to combine.
Then add in the eggs, milk, applesauce, and maple syrup.
Use a wooden spoon or spatula to mix until well incorporated.
Fold in the blueberries.
Spoon into greased cupcake pans or silicone cupcake liners.
Bake at 350 degrees F for about 18 minutes or until golden brown and cooked in the center.
