Ingredients
  

  • 2 cups old fashioned oats
  • 1 tsp baking powder
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tbsp chia seeds
  • 1 cup fresh blueberries
  • 2/3 cups milk
  • 1/2 cup applesauce
  • 2 tbsp maple syrup

Instructions
 

  • In a mixing bowl combine the oats, baking powder, cinnamon, and chia seeds. Whisk to combine.
  • Then add in the eggs, milk, applesauce, and maple syrup.
  • Use a wooden spoon or spatula to mix until well incorporated.
  • Fold in the blueberries.
  • Spoon into greased cupcake pans or silicone cupcake liners.
  • Bake at 350 degrees F for about 18 minutes or until golden brown and cooked in the center.
  • Enjoy warm or let cool and refrigerate for up to 3 days for best results.
