Ingredients
  

For The Apple Cookies

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp cloves
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup reduced apple cider
  • 1/2 cup unsweetened applesauce

For The Filling

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

For The Sugar-Cinnamon Coating

  • 1/4 cup granulated sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions
 

  • 1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • 2. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
  • 3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
  • 4. Gradually add the dry ingredient mixture to the butter mixture, alternating with the apple cider and applesauce. Mix until just combined.
  • 5. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Use the back of a spoon to slightly flatten each dough mound. 
  • 6. Bake in the preheated oven for 8-10 minutes, or until the cookies are set and slightly golden around the edges. Remove from the oven and let them cool completely on a wire rack.
  • 7. Meanwhile, prepare the filling by beating together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, and continue beating until well combined and fluffy.
  • 8.  FOR THE SUGAR-CINNAMON COATING - In a small bowl, mix together 1/4 cup of sugar and 2 tablespoons of ground cinnamon until well combined. Once the whoopie pies are baked and cooled, melt 1/4 cup of butter and brush it onto the top of each pie.
  • 9. Dip each cookie into the sugar-cinnamon mixture making sure to cover the entire top.
  • 10. Once the cookies have cooled completely, spread a generous amount of the cream cheese filling onto the flat side of one cookie. Top with another cookie, flat side down, to create a sandwich.
