This Brownie Pops recipe is so insanely good, easy to make and it looks absolutely adorable. Just in time for a fun holiday movie night. BROWNIE PEPPERMINT CAKE POPS
This Christmas cake pops recipe is actually perfect for the gifting for the holidays. It looks so festive and jolly that everyone would love to take a bit of it. These cake pops are so divine tasting, and are so pretty to make, you could add it to a buffet or dessert table and brighten up any holiday event. These easy to make Peppermint Brownie Pops are inexpensive DIY Christmas gifts you can give to friends and family.
INGREDIENTS LIST
White Chocolate Chips – You can also use white chocolate candy melts or wafers.
Peppermint Extract – for that festive Christmas flavor.
Brownie Cake Mix – I would suggest using extra fudgy brownie cake mix.
Finely crushed Candy Canes – or you can also go with the holiday sprinkle mix.
To make these as gifts, you can also grab a glass jar and satin red ribbon to make cute gift ribbon bows.

HOW TO MAKE PEPPERMINT CAKE POPS
- Bake brownie mix according to the package instructions. Stir in peppermint extract into brownie batter.
- Allow the brownies to cool. Scoop out a small amount of baked brownie mix and shape into a ball. I would suggest avoiding the brownies at the very edge of the pan, since they may be crispy and could result in not being able to make smooth nice round balls.
- Once the brownie balls are rolled, you can set them aside and get ready to dip your lollipop sticks.
- Melt white chocolate chips in microwave in a microwave safe bowl at 20-30 second intervals. You can also use ready-to-use vanilla cake frosting to make the process easier.
- Dip the end of 1 stick into the melted chocolate or cake frosting, and then directly into the center of one of the brownie balls.
- Place brownie balls in the freezer for about 30 minutes, then – Dip each brownie ball into melted chocolate, allowing excess to fall off.
- Immediately sprinkle with crushed candy canes or holiday sprinkles.
- Put back the cake pops into the fridge for about 30 more minutes. Enjoy!

Easily the closest thing to the Starbucks brownie cake pops. I think I added a few crushed peppermint pieces into the batter (so you had the crunchies when you chewed them) and I remember Starbucks added white sugar crystals to the outside of theirs. I liked this recipe because the only thing I don’t like about Starbucks cake pops is how “un-cooked” they felt in my mouth. But, I agree with the addition of peppermint extract into the brownie batter it added an extra level to this recipe that changes everything. (I actually started doing it to my recipe before I saw this one.)
