HOW TO MAKE APPLE CIDER WHOOPIE PIES
This is a short rundown of steps that you need to take to make these delicious sandwich cookies. You can find the full recipe in the recipe card below.
MAKE APPLE CIDER COOKIES
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
4. Gradually add the dry ingredient mixture to the butter mixture, alternating with the reduced apple cider and applesauce. Mix until just combined.
5. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Use the back of a spoon to slightly flatten each dough mound.
6. Bake in the preheated oven for 8-10 minutes, or until the cookies are set and slightly golden around the edges. Remove from the oven and let them cool completely on a wire rack.
MAKE THE FILLING
7. Meanwhile, prepare the filling by beating together the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, and continue beating until well combined and fluffy.
8. FOR THE SUGAR-CINNAMON COATING – In a small bowl, mix together 1/4 cup of sugar and 2 tablespoons of ground cinnamon until well combined. Once the whoopie pies are baked and cooled, melt 1/4 cup of butter and brush it onto the top of each pie.
9. Dip each cookie into the sugar-cinnamon mixture making sure to cover the entire top.
10. Once the cookies have cooled completely, spread a generous amount of the cream cheese filling onto the flat side of one cookie. Top with another cookie, flat side down, to create a sandwich.
Serve and enjoy!
PRO TIPS
Reduce the apple cider. For this one, trust me. Use apple cider that is reduced down on the stove. Reduce down 2 cups of apple cider to 1/2 cup. Let it sit for 30 minutes for the ultimate apple cider flavor. The difference is huge between a reduced apple cider and original one.
Add the cream cheese filling only after the cookies have cooled down completely. Also, don’t forget to add a decent amount of the cream cheese filling for the best cookie sandwich experience.
Add cinnamon to your sugar coating. Although you can skip this ingredient, I highly suggest using it to add for additional flavor.
