HOW TO MAKE CROCKPOT SPINACH ARTICHOKE DIP
Add all ingredients into a 4 quart Crockpot.
Cover and cook on low for 2-3 hours or on high for 1-2 hours, until cheese has fully melted and is bubbling. Stir together halfway through cook time until well combined.
Stir together again before serving. Serve with tortilla chips, pita bread, or sliced baguettes. Turn the Crockpot onto the warm setting so the dip stays warm and melted.

STORAGE AND REHEATING:
Refrigerate leftovers in a sealed container for 3 or 4 days.
Reheat on the stovetop over medium heat until heated through.

TIPS FOR SUCCESS
Want more in your dip? You can add some chopped chicken, diced bell peppers, or extra spinach or artichokes in it.
Want it spicy? Add some cayenne pepper, red pepper flakes, or diced jalapenos!
To thaw frozen spinach, just run it under cool water for a few minutes and then drain. Pat it dry so that the dip doesn’t get watery.
Fresh chopped baby spinach can be used. You will need about a 16 oz package to get the same amount in this recipe. Stir it as it cooks down so that the leaves don’t burn on the side of the Crockpot.

I like to chop the artichokes so every scoop gets some in it but if you prefer larger chunks in each bite you can keep it quartered.
If you have leftovers and need to reheat it, you can add a little more milk to thin it. To get it super cheesy again, add more mozzarella and parmesan. Reheat on the stovetop or in the Crockpot on low, stirring occasionally, until cheese is melted.
