- 1 cup peanut butter, smooth or crunchy
- 1 cup dark chocolate, chopped (or dark chocolate chips)
- 2 cups fried noodles (such as chow mein noodles)
- mini chocolate eggs, as many as desired
In a microwave-safe bowl, melt the peanut butter and chopped dark chocolate together. You can do this in the microwave at 30-second intervals, stirring in between each interval until the mixture is smooth and well combined. Alternatively, you can melt them together in a double boiler on the stove.
Once the peanut butter and chocolate are melted, add the fried noodles to the bowl. Gently fold them into the mixture until they are evenly coated.
Scoop spoonfuls of the mixture into each muffin pan cup, dividing it equally among the cups. Use your fingers or the back of a spoon to create an indentation in the center of each portion to form a nest shape.
Place the muffin pan in the refrigerator for about 30 minutes or until the cookies are set and firm.
Once the cookies have set, remove the muffin pan from the refrigerator. Carefully remove them from the muffin pan. If needed, use a small knife or spoon to help loosen the edges of the cookies from the pan.
Gently press mini eggs into the center of each nest. Allow the cookies to fully set and firm up in the refrigerator for another 1-2 hours.
Once the cookies are completely set, transfer the cookies to a serving plate or store them in an airtight container.
