4th of July Cake Pops

4th of July Cake Pops - are a perfect bite-sized patriotic dessert that will be a hit at your next Independence Day or Memorial Day party. Made with red velvet cake mix, they are so insanely delicious and perfect for a red white and blue themed party.

Ingredients
  

  • 1 box red velvet cake mix (15-18oz, depending on the brand)
  • 8 oz cream cheese, softened
  • 16 oz white chocolate, melted
  • red and blue food gel
  • patriotic sprinkles

Instructions
 

  • Crumble the cake into a large bowl with your hands.
  • Add the softened cream cheese to the bowl with the crumbled cake. Mix until well combined.
  • Roll the cake mixture into small balls and place them on a baking sheet lined with parchment paper. Let it chill in the fridge for about an hour.
  • Insert a lollipop stick into each cake ball.
  • Melt the white chocolate in a double boiler or in the microwave in 30-second intervals, stirring between each interval until melted.
  • Divide the melted white chocolate into three separate bowls. Add a few drops of red gel food coloring to one bowl and stir until fully combined. Add a few drops of blue gel food coloring to another bowl and stir until fully combined. Leave the third bowl of white chocolate as is.
  • Dip the cake pops into the white melted chocolate, making sure to cover the entire cake ball. Allow any excess to drip off before placing the cake pop back onto the parchment paper.
  • Immediately sprinkle the red and blue sprinkles on top of the chocolate while it is still wet. Repeat this process with all of the cake pops.
  • Once the chocolate has hardened, melt again the blue and red chocolate. Fill two piping bags with both chocolates and decorate your cake pops.
  • Wait until the chocolate hardens and serve.
