Banana Pudding Cupcakes Recipe - These are the best banana cupcakes with a delicious vanilla filling and banana chunks. They are sweet, little cupcakes of banana pudding heaven. The perfect easy dessert for banana lovers!
Preheat the oven to 350°F. Mix the yellow cake mix batter as per the instructions. (You'll need to add eggs, milk and vegetable oil)
Line a cupcake pan with cupcake liners.
Divide batter by filling each one about ¾ full. Bake for 15 minutes.
Remove from the oven and allow to cool completely on wire racks.
Filling
Chop bananas into small pieces and add the pudding mix to the whole milk. Add the chopped bananas to the bowl with the pudding mix and the milk, stir to combine. Then place the mixture into the fridge for at least 15 minutes.
Once the cupcakes are cooled, hollow out the center of each cupcake. Once the vanilla pudding filling has set, spoon into a piping bag with a Wilton 4B tip. Pipe into each cupcake, filling them with the vanilla pudding.
Whipped Cream
Add the cream, vanilla extract and powdered sugar to a large mixing bowl and beat until stiff peaks form.
Pipe the whipped cream onto the top of the cupcakes.
Decorate each cupcake with a banana circle and then sprinkle with crushed vanilla wafers.
