HOW TO MAKE SHRIMP MANGO TACOS
Prepare the Mango Salsa:
- In a mixing bowl, combine the diced mango, red onion, red bell pepper, jalapeño, lime juice, and fresh cilantro. Season with salt and pepper to taste. Mix well.
- Refrigerate the mango salsa while you prepare the shrimp.
Cook the Shrimp:
- In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the peeled and deveined shrimp to the skillet. Sprinkle with chili powder, cumin and salt. Cook for 2-3 minutes per side until the shrimp turn pink and opaque.
- Drizzle the lime juice over the cooked shrimp and toss to coat. Remove from heat.
Assemble the Tacos:
- Warm the tortillas according to package instructions.
- Place a small handful of shredded lettuce on each tortilla.
- Add a few cooked shrimp to each tortilla.
- Top the shrimp with a generous spoonful of mango salsa.
- If desired, sprinkle crumbled feta cheese on top.
- Serve the shrimp tacos with extra lime wedges for squeezing over the top.

- 2 ripe mangoes, peeled, pitted and diced

- 1/2 red bell pepper, diced
- 1/2 jalapeno pepper, seeded and finely chopped
- juice of 2 limes
- 2 tbsp fresh cilantro, chopped
- salt to taste
