The best part about these yummy pineapple popsicles is that you only need a handful of ingredients. Here’s how it goes –
Coconut Milk
Granulated Sugar
Pineapple Juice
White Rum
Pineapple (chopped into small pieces)
HOW TO MAKE PINA COLADA POPSICLES
Combine. In a small saucepan, combine the pineapple juice and sugar over medium heat. Stir until the sugar has completely dissolved, then remove from heat and let cool.
Blend. In a blender, blend the chopped fresh pineapple until smooth. Add the cooled pineapple juice mixture, coconut milk, and rum (if using) to the blender and pulse until well combined.
Pour. Pour the mixture into popsicle molds, leaving a little bit of room at the top for expansion as the popsicles freeze.
Insert. Insert popsicle sticks into the molds and freeze for at least 6 hours or overnight.
Remove. To remove the popsicles from the molds, run the molds under warm water for a few seconds to loosen them.
TIPS FOR SUCCESS
- You can add shredded coconut or chopped pineapple to the popsicles before freezing for added texture and flavor.
- If you don’t have popsicle molds, you can use small paper cups or ice cube trays instead. Simply fill the cups or trays with the mixture, insert popsicle sticks or toothpicks, and freeze until solid.
- If you prefer a non-alcoholic version, simply omit the rum from the recipe.
- Fresh Pineapple Pieces vs Canned: Both are going to work. Choose what’s easier for you to add.

HOW TO STORE POPSICLES?
Store the pina colada popsicles in the freezer for up to three months. For longer storage, wrap each individually in plastic wrap before storing in an airtight bag or container.
HOW DO I MAKE SURE MY POPSICLES DON’T STICK TO MOLD?
The best option I have found is to fill a pan or container that is at least as tall as your mold with warm (not hot) water, and briefly dip the mold in until the pops loosen, about 20 to 30 seconds.
