How to Make Passion fruit Poke Cake
Preheat the oven according to the instructions on the vanilla cake mix box. Prepare the cake batter following the instructions on the box, using the additional ingredients
Pour the batter into a greased 8,5×8,5-inch baking dish. Bake the cake according to the instructions on the box. Once baked, remove from the oven and let it cool for 10 minutes.
Using the handle of a wooden spoon or a skewer, poke holes all over the cake, making sure to create evenly spaced holes.
In a mixing bowl, prepare the cream cheese frosting. Beat the softened butter and powdered sugar together until it’s creamy, around 3 minutes using an electric mixer on medium speed.. Add the cold cream cheese and continue beating until well combined and smooth, around 3 more minutes. Set aside.
In a medium saucepan, prepare the passion fruit curd. In a small or medium bowl, whisk together the granulated sugar, egg yolks and egg and set aside. Heat passion fruit puree/pulp, and unsalted butter together in a small saucepan over medium heat stirring constantly until the butter melts and both ingredients become a thick sauce. Remove from heat and pour ¼ cup of the passion fruit and butter mixture into the eggs and sugar mixture. Mix well and pour it into the saucepan. Mix well and cook for about 5 minutes, stirring constantly until it thickens. Then let it cool in the fridge for about 20 minutes before using.
Pour the cooled passion fruit curd over the cake, making sure to fill the holes and spread it evenly. Reserve about 3 tablespoons of the curd for decoration.
Spread the prepared cream cheese frosting over the top of the cake, covering the passion fruit curd.
Now, decorate the cake:
In a small bowl, mix the reserved 3 tablespoons of passion fruit curd with the pulp from 2 passion fruits. Spread this mixture over the cream cheese frosting as decoration.
