Cooked Chicken – you can buy a Rotisserie Chicken that is ready-to-use, or make your homemade one. If you have decided to make your own cooked chicken, simply poach chicken breasts in boiling water and simply shred it afterward. Easy enough to do ahead of time.
BBQ Sauce – for this recipe I would recommend using sweet and tangy BBQ sauce so that the flavors mix together well. Consider using a little less smokey BBQ sauce.
Cream Cheese – we used the original Philadelphia cream cheese, but you can use any brand you prefer. I would recommend using a full-fat cream cheese for success (The original one is better for recipes than a low-fat or fat-free).
Sharp Cheddar Cheese – I mean, lots of it! The cheesier, the better. You can also use a mix of Mozzarella Cheese and Cheddar Cheese.
Garlic Powder
Cayenne Pepper
Salt & Pepper – to taste.
Green Onions – for garnish and for a pop of color.
HOW TO MAKE BBQ CHICKEN DIP
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the shredded cooked chicken, softened cream cheese, BBQ sauce, shredded sharp cheddar cheese, onion powder, cayenne pepper (if using), salt, and pepper. Mix well until all the ingredients are evenly combined.
Transfer the mixture into a baking dish, spreading it out in an even layer.
Bake in the preheated oven for 20-25 minutes, or until the dip is hot and bubbly, and the cheese on top is melted and slightly golden.
Remove the dip from the oven and let it cool for a few minutes.
Sprinkle the sliced green onions over the top of the dip for a pop of color.
Serve the BBQ chicken dip with tortilla chips, crackers, or vegetable sticks for dipping.
