Cake mix, key lime curd filling and whipped topping are all you need! I love how easy, simple and versatile is this tangy and sweet lime poke cake. It is also a great easy cake for St. Patrick’s Day! You can simply add more green food gel to your lime curd and make a very festive St. Patrick’s Day poke cake. We love eating this cake during the lime season and all summer long due to it’s amazing flavor combination. I love all things peanut butter and chocolate for my desserts, but the freshness and tanginess of this key lime cake is something I will stand for.

For The Cake
Yellow Cake Mix, 1 box (15.25oz)
For The Lime Curd
Granulated Sugar
Eggs
Unsalted Butter
Lime Juice
Lime Zest
Green Food Gel
For The Whipped Topping
Heavy Cream
Powdered Sugar
Vanilla Extract
HOW TO MAKE KEY LIME POKE CAKE
Prepare. Preheat your oven to 350°F (180°C). Grease a 9×13 inch baking pan with non-stick cooking spray.
For The Cake. In a large mixing bowl, combine the cake mix, water, vegetable oil, eggs, and lime juice. Beat with an electric mixer until well combined. Bake the cake according to the box instructions.
Make The Lime Curd. While the cake is baking, make the lime curd. In a medium-sized saucepan, whisk together the eggs, the lime juice, lime zest and sugar until well combined. Place the saucepan over medium heat. Cook the mixture, whisking constantly, until the mixture is smooth. Continue to cook the mixture over medium heat, whisking constantly, until it thickens and coats the back of a spoon, about 8-10 minutes.
Remove the saucepan from the heat and add the butter in cubes and mix until it dissolves and the texture is creamy. Add 2-3 drops of green food gel.
Transfer the lime curd to a clean container and let it cool to room temperature.
Poke. Once the cake is done, use the handle of a wooden spoon to poke holes all over the cake, making sure to go all the way to the bottom.
Pour. Pour the lime curd over the cake, making sure it gets into all the holes.
Refrigerate. Then refrigerate the cake for at least 1 hour or until the curd has set.
Make the whipped topping. In a medium bowl, use an electric mixer to whip together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread. Spread the whipped cream topping evenly over the cake.
Refrigerate. Cover the cake and refrigerate for at least another hour before serving.
Serve. Decorate with lime slices and serve.

- While the cake is baking, make the lime curd. In a medium-sized saucepan, whisk together the eggs, the lemon juice, lemon zest and sugar until well combined/ Place the saucepan over medium heat. Cook the mixture, whisking constantly, until the mixture is smooth. Continue to cook the mixture over medium heat, whisking constantly, until it thickens and coats the back of a spoon, about 8-10 minutes.
