I’m aware that jello poke cakes have been around for some time now, but I haven’t seen many great Holiday Poke Cake recipes. This is my chance to shine and deliver you the best, festive Christmas Poke Cake recipe that tastes absolutely incredible and looks so gorgeous. The cherry and lime jello combination is so perfect and fun for the holiday season. It really looks like the perfect Christmas cake you’ll ever make. The cake itself is very rich and moist, it is so easy to make and you’ll only need a handful of ingredients. How convenient for the holiday parties?!
INGREDIENTS NOTES
Cherry Jell-O Mix – for the red color for the cake. You can also use any other red colored jello mix – raspberry, cranberry, strawberry, etc. Feel free to use different jello mix colors for any other special occasion.
Lime Jell-O Mix – for the green color. You can also try apple jello mix.
White Cake Mix – and ingredients for making it. As we are going to use red and green jello mixtures, the white cake mix is going to favor the green and red colors.
Water – boiling water and cold water.
Whipped Cream – we are going to make our own homemade whipped cream, but you can also use cool whip if you are out of time.
Holiday Sprinkles
HOW TO MAKE CHRISTMAS POKE CAKE
- Bake the white cake according to directions on the box. You should use 9×13 baking pan or dish.
- Let the cake slightly cook and poke holes in the cake with the back of a wooden spoon or a fork.
- Place cherry jello mix in one bowl and lime jello mix in another bowl. Pour 1 cup boiling water in the red mix and 1 cup of boiling water in the green bowl. Mix them until smoothly disolved.
- Pour 1/2 cup cold water in with cherry jello and 1/2 cup cold water in lime jello mix.
- Pour red jello in every other row of holes and pour green in the remaining holes.
- Let the cake sit in the fridge for 3-4 hours or overnight.
- Make a homemade whipped cream or use cool whip, top the cake off with cream and holiday sprinkles.
